Beans and Pulses
Beans and pulses, while being a traditional staple for many diets, are largely being recognized in modern cuisine. Besides their great taste and versatility, beans have a number of health benefits.
Both coloured and white beans are low in calories, cholesterol, fat, and sodium, and high in iron, making them an excellent protein source and a great meat alternative.
High levels of soluble and insoluble fibre in beans both aid in the prevention of such diseases as cancer, kidney disease, liver disease, and cardiovascular disease, and help to control diabetes, obesity, and intestinal disorders.
As a rich source of B-vitamins, calcium, iron, phosphorous, potassium, and zinc, beans offer more essential nutrients than many other food sources. Beans are also an excellent source of folate (folic acid), a B-vitamin, which is essential during pregnancy.
Beans may also act as a healthy appetite suppressant. They digest slowly, causing a low, sustained increase in blood sugar, delaying hunger. They are quickly being recognized as a natural alternative to enhance weight-loss programs.
